There’s No Love Sincerer Than That of Food

Thank you for checking out my newest blog post. I love writing. I love food. I love writing about food. People who love to eat are always the best people. I strongly believe in that! I think one of the best ways I show that I love you is by cooking for you and feeding you. As I dig deeper into my passion for writing, I find myself always writing about food, #momlife, exercise, and faith. This post, in particular, is going to blow your mind. Let me warn you up front….this is NOT a healthy recipe. This is an “I worked hard all week, I need a guilt-free cheesy delicious meal to treat myself!” type of meal. So sorry I have to share this. It was amazing. My whole family loved it including my toddler! She has 12 teeth and tore her baby bowl up and looked at me asking for me it was THAT GOOD. Not only is this recipe good, but it was E-A-S-Y.  Quick and easy.


So What Will You Need:


1 lb boneless skinless chicken breasts, cut into bite-size pieces
1 medium onion chopped
1 large green pepper chopped
1 jar 16 oz Salsa ( I used spicy salsa)
1 16 oz can of corn
12 corn or flour tortilla (6 inches)
1-1/2 cup Mexican blend cheese



How to Make it!


  1. HEAT oven to 400 degrees

  2. COOK and stir chicken, onions, peppers in a large nonstick skillet on medium heat 10 min. Or until chicken is done. Stir in salsa and corn.

  3. COVER bottom of 13×9 inch baking dish with 6 tortillas; top with layers of half each of the chicken mixture, sour cream, and cheese. Repeat layers; cover.

  4. Bake 40 min. Or until heated through, uncovering for the last 10 min.


 

Serving Suggestions: I made this recipe for 2 adults and a toddler, so I cut all the ingredients in half and used a smaller baking pan.



I served this dish with a few slices of avocado. My daughter can eat a whole ½ of Hass avocado by herself. I will need to invest in an avocado tree very soon. I also served this with fried platanos. Growing up West Indian and marrying a Colombian, plantains are a staple in our home. They add the right amount of sweetness to round out this semi-spicy dish.
